“Indian restaurants haven’t changed in fifty years” — Someone, somewhere once said. Probably. That’s not the cutting insult that someone once thought. Indians do many things well. We are warm and hospitable. We know a bargain. We enjoy a drink. In many ways similar to Glaswegians.
Maybe we don’t need to change. Maybe we need to just take a little inspiration from the environment we reside in. From the markets of Old Delhi to my parents’ first restaurant in North Glasgow. Eat spicy. Drink whisky. Our fryers are prepared for anything.
